Coconut Rice Pudding. (Dairy Free)

Oh wow was this coconut rice pudding ever delicious. And as an added bonus it's quick and easy to make. Mr. Potato Head gives it two thumbs up, waaay up!

Ingredients:
  • 1/2 cup white basmati rice, rinsed
  • 2 cups coconut milk
  • 2 cups water
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract  
  • crushed walnuts
  • blueberries (fresh or frozen)   
 Method:

  1. Combine rice, coconut milk, water and sugar in saucepan.
  2. Bring to a boil, then reduce heat and simmer 20 min, stirring occasionally.
  3. Take off heat, add cinnamon and vanilla.
  4. Garnish with crushed walnuts & blueberries. 
  5. Sprinkle with cinnamon & serve warm.
